Happy Monday! Hope you had a wonderful weekend. I had a busy weekend. Saturday I competed in a crossfit competition, with two girlfriends, and we had a great time. Then Saturday night we went out with friends and saw the musical show Cabaret and walked around downtown.
Sunday the weather gorgeous so I got to work in the garden, spend some time cleaning up the patio getting ready for summer. The perfect way to kick off summer is to celebrate National BBQ month.

- 1 package of Farm Rich Smokehouse Pulled Chicken BBQ
- 6 Baked Gluten Free Tostada Shells
- 12 grape tomatoes, diced or 1 large tomato diced
- ⅓ cup Queso cheese, crumble
- 2 tablespoon fresh cilantro, chopped
- 2 jalapeno, sliced
- 2 green onions, trimmed and sliced
- 1 avocado, peeled and sliced
- 1 lime, sliced
- Heat package of Farm Rich Smokehouse Pulled Chicken BBQ according to directions.
- On a serving platter lay out tostada shells in a single layer.
- Top each tostada with chicken, dividing evenly over 6 shells.
- Top with crumbled cheese, tomato, green onion and pepper slices.
- Finish topping with avocado, and cilantro.
- Serve with salsa and lime slices.
