Smokehouse Brisket Giardiniera Ciabatta Pizza

Now that the school year has begun, we are back to our busy routines of juggling homework, activities and family time, plus work, chores and everything in between. To top it all off, dinner can be become one of the most stressful times of each day.

Over the summer, I am more relaxed with my kids and allow them to play all day, find the time to relax and snooze and fill some days with super-fun family activities. Because I allow our summers to have less structured activities, it’s nice to come back to having our dinner routines to come together to talk about our days.

Pizza is always a great dinner idea, isn’t it?? Instead of ordering for delivery, I sometimes take whatever vegetables and meats we have on hand, pop open a jar of marinara and pick up some crusty bread from the market and make pizza with the kids. It’s something the kids can get really into by customizing their own. That kills two birds with one stone because, Mommas, we know how picky our kids can get sometimes, and I’m not making 3 different meals! Making pizza with store-bought dough or crusty bread like ciabatta or French bread, allows for a fun time of making pizza at home and give the family the opportunity to make it to their tastes.

Ingredients:

  • 1 loaf ciabatta bread
  • Marinara sauce
  • 1/4 cup giardiniera, mild or spicy
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese
  • 1 cup Farm Rich Smokehouse Brisket
  • 1/4 cup thinly sliced red onions

Instructions:

Heat oven to 400 degrees. Toss the mozzarella and provolone cheeses together in bowl and set aside.

Slice ciabatta bread in half. Cover the bread in marinara sauce. Add 2 tablespoons of giadiniera (with olive oil) on each slice of bread, over the marinara sauce. Then, top each slice of ciabatta with .75 cup of the cheese mix.

Then take the Farm Rich Smokehouse Brisket and top each ciabatta slice with 1/2 cup, spreading it evenly so that you can brisket in each bite!

Top with red onions and a little more cheese for good measure and bake in the oven, on a cookie sheet for 12 minutes.

Let cool, slice and serve.
