Did you guys know there are 99 days between Memorial Day and Labor Day? It sounds like a lot, but it’s already going by so fast. But in those 99 days, I pretty much plan to eat 99 meals that celebrate fresh ingredients, BBQ, and simple summer recipes.

These BBQ Party Dinner Bowls are my take on everything you find at a backyard BBQ, but simplified, and piled into one bowl. Let me walk you through my thought process on this one. Just go with it, OK? I’ve got some red cabbage that is like a lazy man’s approximation of coleslaw. There’s some pinto beans, that when eaten in combination with the pulled pork sort of remind you of baked beans. There’s sliced mango and cherry tomatoes, which kind of represent the fruit salad / vegetable salad portion of the BBQ buffet table. There’s grilled corn on the cob, just cut off the cob so I could fit it into this bowl. And no BBQ would be complete without some potato chips and pickle spears, right?

Now, pulled pork might not immediately spring to mind when you think of “simple summer recipes.” It can involve hours in the smoker or slow cooker. BBQ Party Dinner Bowls

Yield: 6 servings

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 package (16 ounces) FarmRich Smokehouse Pulled Pork BBQ
  • 4 ears fresh sweet corn, shucked
  • 6 dill pickles, halved crosswise
  • 2 mangos, peeled, pitted and thinly sliced
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 small head red cabbage, thinly sliced
  • 1-1/2 cups cherry tomatoes
  • 1-1/2 cups potato chips
  • 1/2 cup thinly sliced green onions
  • Ranch dressing, for serving (optional)

Directions:

  1. Prepared pulled pork according to package directions.
  2. Meanwhile, preheat grill for direct grilling over medium-high. Place corn in large microwave safe dish with 1/4 cup water; cover with paper towel or plastic wrap. Microwave on high 5 to 6 minutes or until tender crisp.
  3. Transfer corn to grill and cook 3 to 4 minutes or until lightly charred; turning frequently. Transfer corn to cutting board and cut kernels from cobs.
  4. To serve, divide corn, pickles, mangos, beans, cabbage, tomatoes, chips and pulled pork between 6 bowls. Sprinkle with onions and serve with ranch dressing, if desired.
